As Christmas comes around, we’re starting to think about what the new year will bring, and looking ahead, it has been announced that popular Kampus wine bar The Beeswing will reopen with a new food concept in the new year. Having made a name for itself for a cosy atmosphere and interesting wines, The Beeswing will team up with the tapas legends behind Levanter and Baratxuri to enter the new year as a wine and tapas bar within the Kampus complex.
Levanter and Baratxuri was forced to close its quaint tapas spot in Ramsbottom earlier this year, much to the disappointment of fans, so this really is great news for the beloved restaurant. Following incredibly successful pop-ups at Kampus, the team from Levanter are currently working with Anna Tutton, owner of The Beeswing, to put the finishing touches to a brand-new menu for the tapas and wine bar.
Inspired by a lifelong love of Spain and Spanish produce, Anna Tutton and Joe Botham have expanded on The Beeswing’s existing casual neighbourhood dining experience to bring a vibrant new concept to Kampus.
Since opening in 2022, The Beeswing has served its food tapas-style, with seasonal small plates, cheeses and charcuterie on the menu. With their current chef, Luke, heading in a new direction to travel the world, Anna has taken the decision to embrace the change with a new concept for the food.
This new direction is an evolution of the food delivered so far, putting more focus on Spanish cuisine but retaining the social, shared-dining ethos that’s always driven The Beeswing’s food offering. Celebrating the most loved tapas dishes, and some other less-known classic Spanish favourites, the menu will be a concise, well-curated celebration of the flavours of Spain.
Guests will also find Spanish influences throughout. Bar Manager, Charlotte, has taken inspiration from the new direction in the cocktail menu and will bring in Spanish-made spirits, to celebrate producers from throughout the region.
The wine menu, of course, will more heavily – though not exclusively – feature Spanish wines. All wines will continue to be served by the glass, allowing guests to experience the full range on offer.
New featured dishes will include:
- Chorizo, pork and morcilla meatballs in rich tomato salsa
- Patatas al a pobre – potatoes roasted with peppers & onions in a white wine & garlic stock
- Chickpea, spinach + egg with toasted cumin seeds, garlic & Panco breadcrumbs
- Spanish Stews & Braises – featuring cuttlefish, mussels, prawns & tuna, or specially sourced Iberico cuts like baby back ribs or slow cooked cabecero served with crushed garlic chickpeas & a Rioja & pomegranate reduction
Fans of Baratxuri and Levanter will recognise the perfect, oozy tortilla, guaranteed to go with anything you choose from the menu.
Of the new partnership, Joe Botham of Levanter and Baratxuri said: “I’m so excited about our collaboration with The Beeswing; Anna and I are old friends and go back a long way, and her love of Spanish food, great wine and good old fashioned hospitality is really refreshing. We did a pop-up at Kampus in 2022, and it’s an incredibly beautiful setting by the canal. I’m really looking forward to bringing some of our favourite dishes back to the city centre.”
The Beeswing will close on New Year’s Eve for a short period, reopening on January 12 with a new tapas menu and chef, formerly of SUD and Higher Ground. The Beeswing will also be running a 50% off food deal from January 12-31, running from a selected menu allowing guests to sample the new tapas concept for just half price.
