This summer, a new luxury restaurant known as Tender is set to open at Manchester’s 5-star Stock Exchange Hotel. The hotel co-owned by Gary Neville, Ryan Giggs and Winston Zahra, will welcome the new restaurant in June, which will be lead by two-time Michelin star chef, Niall Keating.
Named after the tender care put into crafting each dish and with a nod to the heritage of the hotel, Tender will offer gourmet food for everyday dining within the opulent and historic dining room of the Stock Exchange Hotel. The restaurant replaces Stock Market Grill, which was run by the trio behind Manchester venues Schofield’s Bar, Atomeca and Sterling and closed in July 2023.
Officially opening on June 5, in the newly renovated dining room, Tender will cater for a variety of culinary experiences, offering weekday brasserie lunch, à la carte dinner, afternoon teas, a special Sunday roast and chef’s table and special tasting menu, all created by Niall Keating. In addition to the main dining room, Tender at the Stock Exchange Hotel plans to also open ‘The Bank’, which is a private space for up to 12 guests, where the restaurant will provide a “truly exceptional dining experience”.
Speaking about the announcement, Gary Neville, owner of Stock Exchange Hotel, said: “We couldn’t be happier to be partnering with Niall Keating for Tender and bringing his culinary expertise to the hotel. His vision to create versatile and accessible dining options is exactly what we’ve been looking for, to allow everyone visiting Tender to find the right experience for them.”
Niall, aged 33, earned two Michelin stars, achieved under 30, making him one of the UK’s youngest two-time Michelin star chefs. He honed his skills in Michelin star restaurants around the world before returning to the UK to work at The Dining Room at Whatley Manor Hotel, where he earned his first star in 2017 and a second in 2019. He opened Lunar Restaurant in November 2022 and Niall’s commitment to sustainability earned him a prestigious Green Star from Michelin in January 2021.
Niall Keating spoke on the announcement: “From when I first walked through the doors of the hotel into the dining room, I knew this was the place for me and that we could create something really special. I immediately felt connected to both Gary and General Manager, Tracy Harrison, and I knew what I wanted to create at the hotel and restaurant. I want a space that feels vibrant, warm and energetic, that brings to life the history of the stock exchange roots of the hotel, while providing an upscale and comfortable brasserie dining experience.”
Speaking further on the opening of Tender, Gary Neville, added: “We will also shortly be announcing a series of events and live music experiences, including a weekly music plan, within Tender, that will really bring the venue to life, making it the heart of Stock Exchange Hotel.”
