Owners say the bar will be stripping back coffee and bar culture to what really matters; quality coffee, refreshingly contemporary cocktails and an inventive food menu. All served with incredibly friendly service and good live music vibes.
By day…
By day, Over Under will be serving up coffee and brunch for locals and commuters. Working in close partnership with its roaster, Assembly Coffee, an award-winning, independent speciality roaster. Owners say the coffee is sustainably sourced in Columbia via the Red Associations programme which guarantees a stable and fair price for single producer farmers.
Headed up by Executive Chef, Paul Davies, from Cheshire, the simple yet considered menu has been created to reflect the values of the shop. Contemporary classics such as American Style Pancakes sit alongside Smashed Avocado, Chorizo Hash and Ruben Toastie. He says the ingredients are sourced from sustainable, independent local suppliers wherever possible, such as Brades Farm Dairy in Lancaster, Brownie Owl for cakes in Stockport and Williams of Flint butchers in Flint.

What makes Over Under unique is its ability to transform from day to night, keeping the fun vibe going all evening too. Over Under by Night will be serving up a varied, contemporary cocktail menu and live entertainment line-up that features the best in new and emerging talent from across Manchester in its monthly ‘Live Sessions’.
It takes the coffee shop to cocktail bar concept one step further, turning down the lights and bumping up the music just isn’t enough. Using clever design techniques which involve flipping tabletops and changing wall setups, the atmosphere transforms to create the perfect backdrop for whatever the night holds.
The menu has been devised by cocktail master J. Riviera from multi-award-winning Brooklyn Gin. Serving favourites with a twist, as well as coffee-inspired cocktails such as the Coffee Choco Negroni and Irish B*stard. The evening small plates selection compliments the drinks on offer, serving up dishes such as burrata with sourdough and green pesto and crab sliders.
Launched by young entrepreneur, Ed Barry, Over Under is set to make its distinct mark on the Manchester hospitality scene.
Mr Barry said:
‘In Manchester, we see a unique opportunity to create something original and exciting. We’re appealing to coffee lovers, cocktail fans and people who want a relaxed place to chill with friends or colleagues in the day or evening.
“We have a whole host of artists signed up to play over the summer as part of our ‘Live Sessions’, and we look forward to welcoming those from the local area and further afield to check them out.”
