As our favourite pancake spots remain closed during lockdown 3.0, we’re pretty much left to our own devices this year, flipping pancakes like the novices we are and attempting not to get a shitload of batter on the ceiling. But coming at us with a very special on-theme treat this Pancake Day is Northern Quarter favourite Gooey – the NYC-inspired bakery well-known for its (you guessed it) gooey cookies and stuffed doughnuts.
Celebrating occasions throughout the year with creative specials – including their toffee apple cookie and a sticky toffee Christmas pudding flavour – Gooey has concocted the blueberry pancake cookie, combining classic Shrove Tuesday flavours for an alternative take on the food-filled day.
The limited-edition cookie comes stuffed with chocolate chips and a blueberry centre, with soft buttermilk dough forming the cookie itself, and a maple glaze and white chocolate slab providing the finishing touches.
The cookie is available all week (until 21st February), with limited supplies available for both delivery and kiosk collection. Found at Ducie Street Warehouse, Gooey cookies are available to order online via their website, with delivery across Manchester and collection from the Northern Quarter available during lockdown.
