If you were undecided about whether to get a pizza or a sandwich for lunch you can now have both as a brand new sandwich shop has opened in Manchester, offering the ultimate hybrid of the two. Claiming to be ‘the world’s greatest sandwich shop’, Foldies is a new concept from the team behind popular Manchester restaurants, Brewski and American Pies, serving folded pizza-style sandwiches.
Brewski and American Pies are notorious for coming up with fun, food coma-inducing culinary creations like their sharing platters that is a feast for the eyes and belly, as well as their deep-dish pizzas oozing with cheese, so they had to be the ones to produce this new take on a sandwich. Opening this December and taking over the former American Pies site on Mosley Street (which is now located on Ancoats’ Cutting Room Square), Foldies is a prime site for those in Manchester city centre looking for a bite on the go.
According to the Foldies team, a ‘foldie’ is “your first true sandwich love”. Starting with double caputo 00 dough, proved for 12 hours and showered with olive oil, the dough is then folded and cooked on the stone at 400ºC. Once puffed to perfection, the folded pizza-style butties are then filled with overnight slow cooked or cured meats, salad and sauces made daily in house and ready in 60 seconds.
When it comes to fillings in your folded pizza-style sandwich, customers can order the likes of pistachio pesto, mortadella, rocket, mozzarella and crushed pistachios; confit duck, chorizo, crispy ‘nduja, ranch sauce, hot honey and slaw; slow cooked pork shoulder, ‘nduja honey, rocket, chimichurri, slaw and crackling; or spiced lamb meatball, rocket, basil oil, mozzarella, chive ranch and crushed Doritos. Other options on the lunch menu include a veggie foldie of roasted butternut squash, whipped hot honey goats cheese, peppers, beetroot crisp and basil oil and a ‘Pizza Dog’ consisting of a frankfurter, Korean honey BBQ, French’s mustard, crispy onions and soy pickled jalapeños.
But that’s not all. Foldies is also feeding the early birds of Manchester with breakfast foldies too. Choose from fillings such as fennel sausage patty and maple bacon; sage cheddar scrambled egg, wild mushroom and feta; huevos rancheros with chorizo, feta and scrambled egg; or scrambled egg, sausage patty, chimichurri, brown sauce, goats cheese and bacon. All tucked up in a pizza dough bed, it’s a shame we can’t do the same, so a foldie is the next best thing.
