The creators of Manchester’s much-loved restaurants Brewski and American Pies are set to launch their newest concept ‘BIG TRAY BBQ’ at Salford‘s Quayside this autumn, adding another exciting offering to the destination’s line-up of food and beverage brands.
Spanning 5,235 sq. ft and inspired by Brewski’s ongoing culinary tour of the United States of America, BIG TRAY BBQ will bring a bold, counter-service smokehouse to Quayside, serving up BBQ by weight, homemade sides and standout sauces. From across the 52 states of the US, BIG TRAY BBQ will bring classic Texas all the way through to Nu Skool cutting edge smoked meats and flavours.

With smoke and spice at the heart of the new concept, BIG TRAY BBQ customers can expect the crowd-pleasing portions Brewski is famous for, but with a twist. As well as counter-side carving, new dishes include 16-hour brisket, hot honey jalapeño cornbread and loaded trays of jerk chicken sausage, smoked birria lamb shanks and ribs.
BIG TRAY BBQ by Brewski brings something completely new and exciting to Quayside’s food scene, joining Salford’s newest and biggest food hall, Kargo MKT as well as family-favourites Pizza Express, Turtle Bay and more.
