New restaurant Six by Nico will celebrate its opening with a chippy-themed menu.
‘The Chippie’ will be the first in a series of evolving concepts, with flavours of the local fish and chip shop taking centre stage on the menu.

The restaurant is the brainchild of Scottish-Italian chef Nico Simeone and will be based in the former Roc & Rye site in Manchester’s Spring Gardens. Chef Nico said it will replicate the concept of his Six by Nico restaurants in Glasgow, Edinburgh and Belfast and will be home to a series of carefully curated and constantly evolving menu concepts.
A nostalgic nod to the past, ‘The Chippie’s’ six dishes will be based on the classics found in a traditional British chippy, each one re-imagined and re-created with a contemporary twist. The new menu will feature our favourite chippy dishes, including chips and cheese and a fish supper.
Chef Nico Simeone said:
“We are very excited to launch our restaurant in Manchester with ‘The Chippie’ concept. Most people are familiar with the tastes and scents of their local chip shop and we wanted to take the idea of the everyday chippy menu and re-invent it to create a playful food experience that guests would recognise and be amazed by”
‘The Chippie’ menu will include:
Chips and cheese – Parmesan Espuma / Curry Oil / Salt and Vinegar Potato Croquette;
Scampi– Monkfish Cheeks / Pea Emulsion / Herb Butter Sauce / Gribiche;
Steak pie– Beef Shin / Burnt Onion Ketchup / Mushroom Duxelle / Red Wine;
Fish supper – Cod / Confit Fennel / Samphire / Beer Pickled Mussels / Brandade;
Smoked sausage – Pork Belly / Salt Baked Celeriac / Caramelised Apple / Black Pudding
Deep-fried mars bar– Caramelia Chocolate Mousse / Orange Sorbet / Cocoa Nib.
Pioneering a revolving culinary hub, every six weeks Nico and his team will re-invent the dining experience by serving a new six-course tasting-menu – each one themed upon a different place, memory or idea.
Drawing inspiration from both at home and abroad, from the street markets of the Middle East to a journey across Route 66 in America, Nico and his team will combine different ingredients, flavours, and dishes to create a new dining experience every six weeks. And each new chapter will be kept a surprise with new menus being published two-weeks prior to the next theme.
Chef Nico said:
“We couldn’t be more delighted about bringing a completely new offering and dining experience to the people of Manchester. By challenging ourselves to do this every six-weeks we feel we have created the perfect recipe for an exciting epicurean adventure for not just our diners, but our team too.”
