Following their success in London, the team behind Pastan has opened their very first restaurant in the city centre of Manchester. The vegan pasta brand Pastan is taking over the former site of vegan eatery, Vertigo, nestled in the heart of Manchester’s Royal Exchange, bringing with it an indulgent menu of 100% plant-based pasta.
Pastan will serve various handmade pasta dishes and delicacies, made with premium ingredients and cooked in full view of diners so we can see how they make those incredible Italian dishes vegan. Their fully plant-based menu features favourites such as a vegan carbonara with a homemade creamy sauce and lardons; a pea and shallot ravioli dressed in a salsa verde; Roman classic cacio e pepe; and Catalonian-inspired black cavatelli pasta made in a rich tomato sauce, spiced with apricot harissa and rosemary; plus sides of Loaded Gnocchi.
Co-founder Jerome Ibanzes-Fawcett said: “Our love for food, fresh pasta, our concerns about sustainability, and passion for the hospitality industry was the driving force behind the creation of Pastan. We think Pastan will be a great addition to the already thriving vegan community in Manchester”.
Pastan’s fully vegan menu will continue to change according to the season and adapt in line with customer feedback. It will also incorporate new and exciting ingredients from the plant-based leading industry from brands such as ‘THIS’, Fable and Heura, which feature heavily in their dishes.
Ibanez-Fawcett says that ultimately, “you shouldn’t have to compromise freshness or flavour when you eat food that respects the planet”. Pastan has partnered up with Carbon Free Dining, an environmental initiative operated in partnership with Sustainably Run Restaurants which gives restaurants and their diners the opportunity to mitigate the environmental impact of their meals by planting life-changing fruit trees in the developing world.
After the success of their pop-ups in Neal’s Yard in Covent Garden, Notting Hill and Bristol, Pastan opened its first permanent restaurant in Barbican, London. In addition to their brand new Manchester site, the founders of Pastan plan to open more locations in Bristol and Brighton towards the end of 2022 and early 2023.
