Forget dancing with devil, you can now dine with the devil as a new concept is making waves in Manchester this summer. Known as Taiko, the dining concept is a new extension to the popular Manchester ramen spot, New Wave Ramen, and they are not holding back on the spice.
Situated inside one of Manchester’s top food halls, Mackie Mayor, Taiko brings the likes of “Kara-shibi” ramen, house made chicken buns with chilli crunch and baked in-house milk bread sandos. This fiery type of ramen has taken Japan by storm and beyond as many can’t get enough of the addictive yet numbing sensation it gives.
Kara-shibi ramen consists of carefully selected red peppers “kara” and fragrant numbness oil “shibi” blended into rich soup made with barrel aged miso to give that signature sensation and now brave Mancs can get a taste of it. This devilishly spicy, Szechuan style ‘mala’ numbing ramen at Taiko is served with New Wave aged temomi noodles, braised pork belly, wok vegetables and ajitama (egg).
Depending on how your brave you feel you can choose your own spice level from ‘Medium’ to the mind melting Kikanbo inspired ‘Devil Level” and deep rich broths full of miso umami. Taiko also serves up a ‘mala’ lamb tantanmen, which is a medium spicy bowl with added sesame, lamb and chicken soboro (mince), chilli crunch, spring onions and egg. As for veggies and vegans, you can order the classic wok miso ramen (not spicy) with tofu, wok fired vegetables and optional egg that can be made spicy if you dare.
But that’s not all that you’ll find on the Taiko menu. The new dining concept in Mackie Mayor has cooked up some thick chicken sandos that you’ll definitely want to get your chops round. Consisting of Hokkaido-style fried chicken, Taiko’s “Devil Level Slaw” and spicy mayo served on freshly baked milk bread, it’s a big contender to become your new sandwich obsession.
Plus, there’s more. You can order the likes of Osaka-inspired handmade steamed buns filled with spicy chicken and served with chilli crunch and ponzu. And for the added touch the buns are sealed with the Oni Devil stamp, so you know it’s nice and spicy. You’ll also find the likes of steamed and fried pork gyoza dumplings and spicy, crunchy and lip-smackingly good cucumber dish.
