It’s always disheartening when an establishment closes in Manchester, but there are some circumstances when what comes next is even more exciting. Now Nico Simeone, the creative force behind Six by Nico, has announced his most personal restaurant project to date: Lennox – opening this month.
What to expect at Lennox Spring Gardens

As Six by Nico approaches its tenth anniversary, founder Nico Simeone is marking a new chapter in his career by transforming his Manchester Spring Gardens site into Lennox. This bold reimagining signals a departure from his signature theatrical tasting menus, moving instead toward a “stripped-back” and deeply personal dining experience that Nico describes as the other side of the coin to his established portfolio.
NYC “chef’s studio”
Lennox rejects rigid structure in favour of simplicity, transparency, and a raw, unfiltered energy. Inspired by the creative spirit of New York City, the space is designed as a “chef’s studio” rather than a traditional restaurant. The atmosphere is defined by a confident, unforced aesthetic of steel and concrete, where low lighting and focused table lamps ensure the food remains the absolute focal point.
At its heart lies a high-octane open kitchen—the restaurant’s “engine room”—equipped with a Japanese barbecue and dry-aging fridges for steak and fish, allowing guests to witness the intensity of fire-led cooking first hand.
An intimate dining experience

The dining experience is intentionally intimate, limited to just 56 covers including an 18-seat bar and a six-seat Chef’s Table. This layout dissolves the divide between the kitchen and the guest, fostering a rhythm that feels alive and energetic.
The menu itself is built on the core principles of nostalgia, technique, and indulgence. By rebuilding familiar flavours with precision and depth, Simeone creates dishes that feel emotionally connected yet technically elevated—such as buffalo squid with nori ranch, or lamb belly with katsu curry and pomegranate.

Unlike the rapidly scalable model of Six by Nico, Lennox is a unique, non-scalable expression of Simeone’s creative instinct. The menu will evolve constantly, guided by the best available ingredients and daily specials rather than a fixed seasonal calendar.
Ultimately, Lennox represents a return to Simeone’s roots, offering a vibrant environment that prioritises both culinary creativity and a healthier, more considered kitchen culture for his team.
Lennox will replace Six by Nico at Spring Gardens in Manchester late March 2026.
