Adding to the abundant pizzerias in Manchester is new pizza restaurant, Forbici, which brings the finest master bakers hailing from Naples, promising the formula for “the world’s most powerful pizza dough”. Forbici has now opened its doors to the Manchester masses, and what a great addition it is.
Forbici’s biga dough will be made fresh daily, crafted from the finest flour sourced from Molini Pizzuti and proofed for 12 hours to ensure a delicate airy crust with high-walls. Located on Manchester’s Cross Street, Forbici, which means scissors in Italian, serves up pizza the Neapolitan way: always quartered, always with scissors – perfect for folding and savouring.

As well as serving up your classic Italian pizzas, Forbici also offers an interesting twist on the Neapolitan classics with a limited edition pizza that gives a nod to Manchester’s nearby roots. Their special pizza will feature Lancashire Hotpot and Black Pudding toppings, fusing iconic Northern flavours with the crisp, airy base of Neapolitan dough.
Guests can also choose from a selection of four classic Neapolitan pizzas, including their vegan Zucchine al Tartufo, a combination of rich truffle cream, vegan mozzarella, courgette, and mushrooms, and their spicy Diavola with Napoli salami.

Plus, to complement their pizzas, Forbici has partnered with Italian brewery Amarcord, to bring a new, crisp and refreshing craft beer to Manchester. Shindigger’s Manchester lager will also be on the Forbici drinks menu alongside classic Italian sodas like Polara Limonata and Lurisia Chinotto – the perfect accompaniment to a light and flavourful slice.
Andrew Garton, CEO of Forbici, said: “We’re excited to introduce Manchester to real Neapolitan pizza. We are pioneering the next wave of pizza, and are excited to share it with Manchester.”
